Ingredients for 3 people:
1 cucumber
6 radishes
500 g skyr
1 tbsp lemon juice
a little grated organic lemon zest
2 tbsp fresh dill, chopped
Salt, pepper
Wash the cucumber and cut in half lengthways. Roughly remove the seeds with a spoon. Coarsely grate the rest into a bowl. Season with salt and leave to rest for about ten minutes. This removes the liquid from the cucumber and prevents the cold dish from becoming watered down.
In the meantime, remove the radishes from the bunch and rinse. Cut two radishes into wafer-thin slices for decoration and set aside for the time being. Finely chop the remaining radishes.
In a bowl, mix the yogurt with the lemon juice, lemon zest and fresh dill.
Drain the cucumber and add to the yogurt with the diced radishes. Mix everything together and season to taste with salt and pepper. If the cold soup is too thick, simply add a little natural yoghurt.
Garnish the cold soup with cucumber and radish slices and fresh dill.
Can be served wonderfully with prawns or prawns - then the protein is included.
